I got some ready-made wide rice noodles from the Asian market and I made Pad See Ew! It was pretty good! Except next time I'll put in the veggies and tofu first so they can cook longer before I put in the noodles. They come fresh in a deli pack like ground beef. It was only $2.75 for a lot - I divided them into four chunks and I cooked one chunk today and I estimate that made four servings.
It was pretty simple, I just put in oil - mostly canola with a little sesame - soy sauce, vegetable broth, coriander, pepper and about 1 tsp sugar and cooked the noodles in that sauce. Plus broccoli & carrot (pre-parboiled), extra-firm tofu and a beaten egg. Tasty! I love those wide rice noodles!
