Last week, I went to Trader Joe's. I grabbed what I thought was plain wheat bread but when I got home, I found out it was orange bread. So I've been using it for sandwiches anyway and it's pretty good. But this morning, I saw a billboard for Denny's fruit French toast and I thought "dude! That orange bread would make awesome French toast!" And it does.

GMonkey's Tropical French Toast
2 or 3 slices Trader Joe's Orange Bread (if no orange bread is available, substitute regular wheat bread and add 1 tsp marmalade to the mix)

the mix:
2 tsp brown sugar
2 Tbsp shredded coconut
2 eggs
2 Tbsp milk or soymilk (I always use soymilk in cooking)
1 small handfull assorted dried tropical fruits, cubed (pineapple, guava, papaya)
0.75 tsp pumpkin pie spice or cinnamon
1.25 tsp vanilla

2 Tbsp butter

toppings (maple syrup, apple sauce, crushed pineapple, etc.)

Combine all the things in the mix in a wide, shallow bowl. Soak the bread in the mix till it's coated and a little soggy. The coconut will stick; the dried fruit won't so much so smoosh a few pieces into the bread. Fry the coated bread in the butter in a pan over med/hi heat. Serve with toppings. I didn't have any crushed pineapple; that would've been awesome. And, as usual, the volumes are estimated because I just threw things into a bowl.

ETA: Serving Suggestion - after you eat the toast, sit at the computer and eat the remaining maple syrup with your finger.
