This one's pretty simple - French toast - but I thought up a new twist that makes it awesome:

Brown Sugar Crusted French Toast
2 pieces of bread
2 Tbsp butter
the mix:
- an egg
- some milk
- some vanilla ("some" for the vanilla ≠ "some" for the milk)
- a spoon of sugar
- a dash of cinnamon
3-4 Tbsp brown sugar, spread around on a plate

...I never measure things when I make French toast. Guessing wildly, it's probably about 1/4 cup of milk, 1/3 tsp vanilla, and 2 tsp white sugar.

Mix together the ingredients for the mix in a wide, shallow bowl. Heat a skillet on medium and drop in 1 Tbsp of butter to melt. Dip the bread in the mix then turn it over and dip the other side. Here's the cool part: take the now-soggy bread and put it on the brown sugar, so one side gets coated. Then put it in the pan, brown sugar side down. Leave it a few minutes until that side is cooked golden brown then flip it over and cook the other side. Take out the first piece of toast then put the rest of the butter in the pan and repeat with the second slice of bread. Serve with a little maple syrup.

The brown sugar gets caramelized and gives the toast a thin, crunchy candy coating. If you want to be extra fancy, coat both sides with sugar but I liked it fine with just one.

I went to the supermarket yesterday and I forgot that I needed milk and salad greens. So today after the movie I stopped at Whole Foods. I remembered to buy milk. I even walked through the produce section and thought "is there anything I need here? maybe I'll get some berries? naah." And I was just now contemplating what I would have for dinner and thinking about soup and maybe some salad to go with it (not very hungry; had a big lunch followed by popcorn and Milk Duds) and I realized I forgot to buy salad again. D'oh!

I got two bags of Snyder's Pretzel Pieces, one ranch flavor and one honey mustard & onion, two days ago. I ate them all by yesterday and got a stomachache. Now I'm craving more of the ranch ones.

I'm pretty sure I read a definition of addiction that said it's something you don't want to do and you know it'll feel bad later but you do it anyway.

I'm huuuungry! I'm going to enter the data for 5 10 forms (holy crap, we have over 100 forms to enter for June!) then I'm going to the farmers' market for ingredients to make me some gumbo.

The last time I made that gumbo, I also threw in some black-eyed peas from a can and that makes it more filling and protein-rich. I'm going to do that again.

I adapted this recipe from http://thaitable.com and it's super easy and delicious!

Sweet Sticky Rice
Ingredients:
- 1/2 cup glutinous rice a.k.a. Thai sweet rice; you will probably have to go to an Asian market, I've never seen it at Safeway or similar.
- 1/2 cup plus a bit of water - enough to just cover the rice in a bowl
- 1 Tbsp sugar
- 1/2 cup coconut milk
- the fruit of your choice; mangoes are popular

Directions:
1. Put the rice in a microwave-safe bowl and get a plate that can sit over the top of the bowl.

2. Pour the water over the rice, put the plate on top and let it soak for an hour. Or warm up the water first and soak for 10 minutes.

3. With the plate still on top (the plate is important! or else the water will all evaporate and the rice will explode in your microwave! not that I discovered that the hard way or anything!) cook the rice in the microwave for 2 minutes.

4. Leave it for about 30 seconds to let the steam condense then remove the plate and fluff with a fork.

5. Loop back to 3 two more times or until the rice is squishy and translucent. Eat some if you're not sure. You might have to add a splash more water if it's drying out. My microwave is a super-badass 1.25kW. If yours is wimpy like 750W then two rounds of 3 minutes each should work fine, I have to check it more frequently so it doesn't get overcooked.

6. When the rice is done, leave it covered and get a small saucepan and heat the coconut milk over medium heat.

7. Add the sugar and stir constantly while simmering the coconut milk until it starts to thicken up, about 5 minutes. Or maybe a bit longer, I wasn't really paying attention to the time. Let's say 5-8 minutes.

8. When it's like a moderately syrupy sauce, turn off the stove and pour the coconut milk & sugar into the rice bowl. Stir it up and let sit for 5 minutes. Reserve some sauce for serving, if you like.

9. Serve warm with fruit & extra sauce on top. Makes two servings, or one if you're pretty hungry. I handled the fruit portion the super lazy way: just open a Dole fruit cup and dump it on. I should have poured off some of the syrup from the fruit cup, there was a little too much liquid but apart from that it was very nice.

Food post! I whipped up some delicious meals and that means it's time for a food post.

Tasty Angel Hair Pasta
a handful of angel hair pasta
1/4ish cup olive oil
a handful of baby spinach
1 roma tomato, diced
2 garlic cloves, crushed
fresh herbs from your window garden
salt & pepper to taste

Cook the pasta in boiling salted water. Heat the olive oil on med-low in a frying pan (or a sauté pan if you're fancy-schmancy enough to own one). Sauté the garlic & spinach for a couple minutes then throw in the tomatoes and herbs. The pasta should be done by now; drain & rinse it then toss it in the pan with the vegetables.
Optional: grate some Parmesan on top.
Serve with a glass of Merlot when you're in a crappy mood. Follow with a couple of chocolate truffles.

And then for breakfast today:
Scrambled eggs and asparagus
2 eggs, beaten
1tsp butter
4 sticks of asparagus
1 Tbsp olive oil for the asparagus
1/4 cup olive oil (for the spinach etc.)
a handful of baby spinach
1/2 roma tomato, diced
1 clove garlic
fresh dill from aforementioned window herb garden
Hollandaise (I just used a packet mix, with a little extra lemon juice)
a little sprinkle of salt on the tomatoes

Blanche the asparagus then cook it in a frying pan on med-high heat with a little splash of oil to brown the outside just a little (grilling would also be appropriate but who wants to fire up the grill to make breakfast?). Plate the asparagus topped with warm Hollandaise and set aside; sauté the vegetables in that pan with more oil, and in a separate pan cook the eggs (with the butter). Put the eggs on the plate next to the asparagus and dump the sautéd vegetables on top of the eggs. Eat. Decide to make own Hollandaise next time. Post recipe in LiveJournal. Have weird-smelling pee.

I went to lunch with some friends from the lab today (instead of going to Seminar...) and I had this great burrito. It was a chili relleno burrito: basically a chili relleno inside a bean & rice burrito. Awesome.

Student Body is going to throw a Mardi Gras theme party and I volunteered to do the food, because as you may have heard if you've been reading this journal, I love food. Someone else is taking care of the king cake and I'm doing gumbo, red beans & rice and Cajun chicken. I did a test-run of the gumbo today and it's good.

Cheetos are my favorite at the moment. I suppose it's because I'm into a MMORPG and I'm just that stereotypical. Other all-time favorite snacks include nachos and a cheese & olives plate I like to do. Basically anything cheese-related. Which is why I'll probably never be a vegan.

In honor of the Heroes Thanksgiving episode, I made two pies for dinner! One of which doesn't have a crust so I don't know why it even counts as a pie but whatever.

Vegetarian Shepherd's Pie
The leftovers of which I am eating for lunch right now! This makes about 3 servings.

[Error: unknown template qotd]No, dammit. I NEED calories for my body to function. I'm surprised how many people think they don't. If calories didn't count, I guess it would change how much I ate because I'd be eating constantly and still not getting any energy.

Today I ate reasonable quantities of yogurt, mushroom risotto, lasagna, salad, and ice cream because those are foods that I enjoy and they contain nutrients, which is the purpose of eating food.

Why is it at least half of the Writer's Block questions are annoying like this??

Modified from a recipe on AllRecipes.com

Ingredients
2 Tbsp olive oil
1/2 large onion, finely chopped
1 clove garlic, crushed
a handful of fresh parsley, which winds up being about a tablespoon after you mince it
2 stalks of celery, finely chopped
salt & pepper to taste
a big handful each of white and portabellini mushrooms, finely chopped (about 1.5 cups); or leave some bigger chunks
1 cup milk
1/4 cup heavy cream
1.25 cups rice
4-5 cups vegetable stock
1 tsp butter
3/4 to 1 cup freshly grated Parmesan cheese

Directions
1. Heat the oil in a large skillet, or a pot if you don't have a large skillet. On medium heat, satué onions a little, add garlic, satué until onions are tender. Add celery, parsley and a little salt and pepper. Cook until celery starts to get tender then add the mushrooms and continue cooking 3-5 minutes until mushrooms start to look soft.

2. Pour the milk and cream into the skillet/pot and stir in the rice. I used medium grain white rice. Heat to a simmer then add one cup of stock. Stir pretty much continuously as mixture bubbles and the rice absorbs the liquid. When most of the liquid is absorbed, add the next cup and continue cooking and stirring. After 3 cups, taste the rice to see how done it is and whether you want to add a little more salt (but remember the stock also adds saltiness). Continue until the rice is soft and the mixture is mushy. It takes 5-10 minutes per cup for the liquid to be absorbed so wear comfy shoes and plan on standing at the stove for a good 30 minutes.

3. Stir in the butter and Parmesan to taste and remove from heat. Serve immediately because it'll start to congeal otherwise. It doesn't look as pretty as leftovers but it still tastes awesome.

Next time, I might try half dill and half parsley to give it a little more complex flavor, though as it is this is a very rich, satisfying dish.

I rode my bike to the hardware store today! I had not ridden a bike in years! I needed to buy a small stepladder (along with a drop cloth - I'm finally painting the bathroom and bedroom!) so that made it a little awkward but I hung it from the handlebars and that worked. BUT I had not taken into account that I live at the top of a hill. I had to walk up the last bit and then I collapsed on the couch for a little while.

Now I want Taco Bell for lunch. I COULD ride my bike - there are a lot of stores close enough to my house that I can start biking to them, it's so cool - but I'm still a little tired :(

AND I need energy to start painting. I have all the supplies I need now, no more stalling!

OK, driving to Taco Bell and then I'll get painting.

Mmm, taco salad (hold the beef, extra beans).

ETA: It was not a big ladder! It's about 2 feet high. So it easily balanced on my handlebars. I'm not THAT crazy ;)

ere's what I'm eating right now:

Mostly Thai Vegetable Curry

This makes two large servings or three to four small servings. I always make enough so there's leftovers.

Essential Thai(ish) Sauce Ingredients
13.5 oz can coconut milk
about 1/4 cup vegetable broth
1 or more tsp Chinese garlic chili sauce, depending on how spicy you want it
1 stalk lemongrass, chopped
6 leaves fresh basil
a squirt of lime juice, or the juice of 1 lime if the supermarket hasn't run out of limes >:(

Other ingredients
1 Asian eggplant cut into thick strips
1/2 red bell pepper, diced
2 cups shredded carrots
2 cups broccoli, chopped
1/2 can bamboo shoots
oil
salt to taste
some cooked rice to go with it

Directions
  1. Heat the oil in a frying pan on med and sautee the eggplant and bell pepper.
  2. Meanwhile, put the coconut milk in a stock pot and heat on med-low. Add the garlic chili sauce, lemongrass, basil, broccoli and a little broth
  3. Add the lightly browned eggplant and pepper plus carrots and bamboo shoots to the stock pot.
  4. Taste the sauce - if it's too thick, add a little broth; add salt and chili garlic sauce if needed.
  5. Cook until broccoli is tender.
  6. Serve with rice.

It doesn't quite have that rich flavor you get at a restaurant but it's still pretty good. And you can throw in just about any veggies, tofu or meats. Probably putting in the carrots & bell pepper first and not putting in the broccoli until later so you can stew it longer would improve the flavor.


ETA: After you eat the delicious curry & rice, your stomach might say "hey, you know what's a good idea now? Eat like five pieces of chocolate and a big glass of milk!" but DO NOT LISTEN, IT IS A TRICK! Ooh, I'm too full :(

Yesterday morning. I made scones with Devon cream and jam, tea, and mushroom dill scrambled eggs.

I'm not counting toast or things I just heat up in the microwave. The scones are sort of cheating because they're from a packet mix but the egg was from scratch so the meal as a whole counts, I think.

The lab had a pie competition today and I made a pie! I didn't win the grand prize but I got a "Great Effort! [translation: Everybody Gets A Ribbon]" ribbon. I made Custard Berry Pie; I downloaded a recipe for the crust from allrecipes.com and another for the custard and then the berry topping was my own addition. Some of the pies were ultra sweet and mine was less sweet. The custard was a little bland; next time I'll add vanilla.

I didn't think of getting a picture until after it was eaten but it looks something like this. (Ignore the other pie recipe! Pirate Monkeys Inc. does not endorse non-GMonkey pies!)

Artichoke Melty Goodness

  • 1 whole artichoke, preferably a globe artichoke but a jumbo artichoke will do
  • 1 8oz pack cream cheese. I tried it with reduced fat cream cheese and it worked fine
  • 1 8.5oz can (drained) artichoke hearts in water
  • 1/2 pack (5oz) frozen spinach, thawed and drained
  • 1/2 cup sour cream
  • 1/2 cup shredded parmesan cheese, or as much as you have left if you've already started cooking and you discover you don't have 1/2 cup
  • 2 garlic cloves
  • 6 large fresh basil leaves from the convenient pot of basil in your garden
  • 1/2 tsp salt
  • 1/4 tsp ground pepper, or whatever's that approximate amount because you can't easily dispense pepper from the grinder into a teaspoon
  • a handfull of shredded melty cheese; I usually keep mozzarella/cheddar around

  1. Boil a big pot of water to cook an artichoke (as in this post, except without the garlic butter)
  2. Pre-heat the oven to 375° and put all your ingredients - EXCEPT the mozzarella/cheddar and the whole artichoke - into a blender or food processor and blend them up.
  3. When the artichoke is cooked, put it in cold water until it's cool enough to handle, then hollow it out.
  4. pour the dip into the artichoke and top with cheese. Bake for 30 minutes
  5. serve with bread. It's melty and delicious!

I'm testing this recipe because I'm planning to make it for the thesis defense later this month. I think it's a winner! Next time, I'd use less spinach and more parmesan.
